Ingredients
  • [q:1 1/2] lb sprouting broccoli or kale
  • 1 tsp sesame seeds
  • [q:1/2] Tbsp olive oil
  • [q:1/2] Tbsp sesame oil
  • 5 garlic cloves, finely sliced
  • 1 thumb-sized piece of ginger, finely sliced
  • 1 red chili, deseeded and finely diced
  • 1 Tbsp white wine vinegar
  • 1 Tbsp low-sodium soy sauce
Directions
  1. Bring a large pan of salted water to a boil. Add broccoli and blanch for 3 to 4 minutes. Drain and set aside.
  2. Meanwhile, heat a small frying pan, add sesame seeds and toast over medium heat for 2 minutes until they start to pop. Set aside.
  3. In another frying pan, heat oils over medium heat. Add garlic, ginger, and chili, and fry gently for 2 minutes.
  4. Add broccoli and coat with oil mixture. Add vinegar and soy sauce and cook for a further 2 minutes.
  5. Serve with sesame seeds sprinkled over.

Ingredients

Quinoa Medley

  • 2 cups EDEN Quinoa, washed and drained
  • [q:2 1/4] cups water
  • 1 medium organic tomato, diced
  • 1 medium cucumber, peeled if waxed, seeded and chopped
  • 1 cup scallions, sliced
  • 3 cloves garlic, minced
  • [q:3/4] cup fresh parsley, minced
  • [q:3/4] cup pine nuts, lightly pan toasted
  • [q:1/2] cup pitted black olives, sliced thin
  • [q:1/2] cup roasted red peppers, drained and diced

Dressing

Directions
  1. Bring the water to a boil in a medium saucepan.
  2. Add the quinoa, cover and bring to a boil again.
  3. Reduce the flame and simmer for 12 minutes.
  4. Turn off flame and let sit for 5 minutes.
  5. Place quinoa in a large mixing bowl and fluff with a fork to cool.
  6. Add the tomatoes, cucumber, scallions, garlic, parsley, pine nuts, olives and red peppers.
  7. In a small bowl, mix the dressing ingredients together.
  8. Pour the dressing over the salad and toss to mix thoroughly.
  9. Serve room temperature or chilled.

  • 2 Tbsp olive oil
  • 4 cloves garlic, sliced thinly
  • [q:1 1/2] cups string beans, cut into 2-inch lengths
  • 2 c chopped broccoli florets
  • [q:1 1/4] cups thinly sliced green cabbage
  • 1 tsp green curry paste, dissolved in 1 Tbsp hot water
  • [q:1/8] cup chopped basil
  • Salt
  • [q:1/4] cup chopped unsalted cashews
Directions
  1. Heat oil in a large sauté pan or wok over medium heat.
  2. Add garlic and string beans and sauté for 4 minutes, stirring frequently to prevent garlic from burning.
  3. Add broccoli, cabbage, curry paste, and basil. Sauté for 3 to 4 minutes or until vegetables are tender.
  4. Season to taste with salt. Garnish with chopped cashews and serve.

Directions
  1. Preheat oven to 350°.
  2. Roast rinsed quinoa in a dry skillet until it pops, stirring constantly to evenly roast and prevent burning.
  3. Place quinoa in a casserole dish and add the water.
  4. Heat oil, sauté onions, garlic and curry in skillet until onions are translucent.
  5. Add celery, broccoli and tomato.
  6. Sauté briefly and add to quinoa.
  7. Add shoyu and vinegar.
  8. Mix, cover casserole dish and bake for 45 minutes or until the quinoa is tender.

  • 4 cups stemmed and chopped curly kale, in bite-size pieces
  • 2 Tbsp extra-virgin olive oil
  • 1 red onion, cut into half moons
  • Sea salt
  • 2 carrots, peeled and diced small
  • 3 cloves garlic, minced
  • 1 tsp minced fresh ginger
  • 2 Tbsp freshly squeezed lemon juice
Directions
  1. Cover kale with cold water and set aside.
  2. Heat olive oil in a large, deep saute pan over medium-high heat. Add onion and pinch of salt and saute for 3 minutes. Decrease heat to low and cook slowly until onions are caramelized, about 20 minutes.
  3. Increase heat to medium. Add carrots, garlic, ginger, and a pinch of salt. Saute for 3 to 4 minutes, until carrots are tender. Drain kale and add to pan along with a scant [q:1/4] teaspoon of salt.
  4. Saute until greens turn bright green and wilt, about 3 minutes. Test greens; you may need to add 1 tablespoon of water. Continue cooking, covered, until they become just a little more tender, 2 to 3 minutes.
  5. Drizzle on lemon juice and stir gently. Serve immediately.

  • 2 Tbsp olive oil
  • 3 leeks, white and light green parts, halved lengthwise and thinly sliced crosswise
  • [q:1 1/2] tsp kosher salt, divided
  • 3 cloves garlic, peeled but left whole
  • 6 cups broccoli florets and peeled, diced stalks (about [q:1 1/2] lb)
  • [q:3 1/2] cups low-sodium vegetable broth
  • Freshly ground black pepper, for serving
  • Chopped fresh chives, for serving (optional)
Directions
  1. In a large pot, heat oil over medium-low heat. Add leeks and [q:1/2] tea­spoon of the salt. Cover, and cook, stirring occasionally, for about 10 min­utes, until wilted.
  2. Stir in garlic, broccoli, and remaining 1 teaspoon of salt. Pour in broth, raise heat to medium-high, and bring to a boil. Lower heat to a simmer, partially cover, and cook for about 10 minutes, until broccoli is tender.
  3. Remove from heat and let cool slightly. Transfer soup to a blender, in batches if necessary, and puree until smooth. Gently reheat soup to serving temperature. Alternatively, puree soup directly in the pot with an immersion blender. (The soup can be prepared up to 2 days ahead, cov­ered, and refrigerated until ready to reheat.)
  4. Ladle the soup into bowls, top with some pepper and chives, and serve hot.

  • 1 large bunch (about 1 lb) greens (kale, chard, mustard, beet greens, or collards), cut crosswise with stems removed

Spicy Garlic Vinaigrette

  • 2 Tbsp white-wine vinegar
  • 2 garlic cloves, finely chopped
  • 1 tsp ground chili powder
  • 1 tsp honey
  • Salt and freshly ground black pepper to taste
  • 3 Tbsp extra-virgin olive oil

Salad

  • 4 medium zucchini, trimmed and quartered lengthwise
  • 6 large tomatoes, quartered
Directions
  1. Preheat oven to 375º.
  2. To make vinaigrette, combine vinegar, garlic, chili powder, honey, and salt and pepper to taste in a small bowl. Slowly whisk in oil until blended.
  3. Place zucchini on a lightly oiled baking sheet. Bake until zucchini are tender, about 20 minutes.
  4. Divide zucchini and tomatoes among 6 salad plates. Drizzle with vinaigrette. Serve immediately.
