  2. Add basil and blend until smooth paste is formed.

  • [q:1/2] cup chopped onion
  • 2 garlic cloves chopped
  • 2 celery stalks finely chopped
  • 1 carrot finely chopped
  • [q:1/2] teaspoon sea salt
  • [q:1/2] teaspoon freshly ground black pepper
  • 2 (32 ounce) cans crushed tomatoes
  • 1 dried bay leaf
Directions
  1. Heat oil in large pot, over medium-high. Sauté onions and garlic until onions are translucent, about 7 minutes.
  2. Add celery, carrots, salt and pepper. Sauté until vegetables are soft, about 7 minutes.
  3. Add tomatoes and bay leaf. Simmer covered over low heat until the sauce thickens, about 45 minutes.
  4. Remove bay leaf
  5. Salt and pepper to taste

  • 28 oz can whole tomatoes or fresh tomatoes
  • 1 tsp sugar, to taste
  • 1 tsp salt, to taste
  • 1 or 2 Tbsp oregano, crushed, to taste
  • 2 tsp grated Romano or Parmesan cheese
Directions
  1. Mix all of the ingredients with a masher or hand-held blending device to mash up the tomatoes.*
  2. Cover the sauce with plastic wrap and let it chill overnight so that the flavors can marinate together.
  3. Bring it to room temperature for an hour or so before you will use it.**

  • 10 oz carrot coriander soup
  • [q:1/4] cup orange juice
  • [q:1/4] cup roasted tomatillos
  • [q:1/4] cup dark brown sugar
  • 1 tsp Sherry vinegar
  • 1 tsp lime juice
  • [q:1/4] tsp Tabasco sauce
  • [q:1/4] tsp ancho chile powder
  • [q:1/4] tsp salt
  • 1 Tbsp fresh cilantro, finely chopped
  • Pinch of cumin
Directions
  1. Place all ingredients in a small saucepan over medium heat. Mix thoroughly.
  2. Bring mixture to a simmer. Remove from heat.
  3. To store, cool to room temperature, cover, and refrigerate.

  • 2 (28-ounce) cans crushed tomatoes
  • 1 (12-ounce) can tomato paste
  • 1 (15-ounce) can tomato sauce
  • Hot cooked pasta
Directions
  1. Heat olive oil in a large saucepot over medium heat. Add the sausage and cook until brown and crumbly, stirring constantly. Remove the sausage to a paper towel-lined plate. Set aside.
  2. Add the onion to the pan drippings and sauté until golden brown. Add the garlic and sauté for 1 to 2 minutes.
  3. Reduce the heat to low. Add the sausage, celery salt, basil, oregano, bay leaf, sugar, vanilla extract, salt and pepper. Stir in the crushed tomatoes, tomato paste and tomato sauce. Simmer for hours to blend the flavors.
  4. Remove the bay leaf. Serve over your favorite pasta, prepared al dente.
