Ingredients
  • [q:1 1/2] cups plain kefir
  • 2 avocados, peeled, pitted, and sliced
  • 2 cucumbers, peeled, seeded, and chopped
  • 2 Tbsp lemon juice
  • 1 garlic clove, chopped
  • Salt to taste
Directions
  1. In a high-speed blender, combine all ingredients. Blend on High until smooth and creamy.
  2. Chill soup in the refrigerator for at least 2 hours. Serve chilled.

Frisée Salad with Avocado Kefir Goddess Dressing

Ingredients
  • Onion

    • 1 small red onion, thinly sliced 
    • Juice of 1 lime 
    • Pinch of kosher salt 
  • Dressing 

    • [q:1/2] cup organic plain whole-milk kefir 
    • 1 medium avocado, pitted and peeled, divided
    • 2 Tbsp lemon juice 
    • 1 bunch fresh chives 
    • [q:1/2] cup loosely packed fresh tarragon leaves 
    • 1 bunch fresh parsley (1 inch of stems trimmed and discarded) 
    • 1 clove garlic, peeled 
    • Sea salt 
    • [q:1/4] cup extra-virgin olive oil 
  • To Serve

    • 1 head frisée, roughly chopped 
    • 1 head green or red leaf lettuce, torn into small pieces 
    • 1 cup radishes, quartered
Directions
  1. Onion

    1. Soak onion in lime juice and salt for 30 minutes. Drain and discard liquid.
  2. Dressing

    1. In a blender, combine kefir, half of avocado, the lemon juice, chives, tarragon, parsley, garlic, and pinch of sea salt.
    2. Purée and, with the blender running, drizzle oil in slowly, until dressing is smooth and has a beautiful dark avocado green color. Taste and add more salt if needed.
  3. To Plate

    1. In a large bowl, combine frisée, lettuce, drained onions, and radishes. Add goddess dressing to sides of bowl and mix well. Sea-son with more sea salt if needed.
    2. Transfer salad to a large platter and garnish with remaining avocado, sliced.

Zucchini Soup With Cinnamon, Cumin And Kefir

Ingredients
  • 1 lb trimmed zucchini
  • [q:2 1/2] cups vegetable broth
  • 1 Tbsp olive oil
  • 1 cup chopped onion
  • [q:1/2] tsp seeded and minced serrano chile, or to taste
  • [q:1/2] tsp fennel seed
  • [q:1/2] tsp cinnamon
  • 1 tsp ground cumin
  • [q:1 1/2] cups Redwood Hill Farm Goat Milk Plain Kefir
  • Sea salt and freshly ground pepper
  • Garnish: Chopped fresh cilantro or mint and lime or lemon wedges 
Directions
  1. Chop zucchini in large chunks.
  2. Add broth to a soup pot, bring to a boil and add zucchini. Reduce heat and simmer, covered, for 4 to 5 minutes, or until zucchini is barely tender but still bright green, Remove from heat and cool.
  3. Meanwhile, heat oil in a small, non-stick frying pan. Add onion, chile, fennel, cinnamon and cumin, and sauté until onion is soft but not brown and spices are fragrant.
  4. Put both mixtures into a food processor and pulse until well chopped but still with some texture.
  5. Pour into a bowl and stir in kefir and season to taste with salt and pepper.
  6. Chill for at least 2 hours. Serve garnished with a sprinkling of cilantro and added drops of lemon or lime juice to taste.
