  • 2 kiwi fruits
  • 2 red apples
  • 1 (1-inch) piece fresh ginger
  • 2 tsp fresh rosemary

Directions
  1. After thoroughly washing all the produce, remove skins from kiwi fruits. Core apples.
  2. Add kiwi fruits, apples, ginger, rosemary, and lime to a juicer and juice them.

Ingredients
  • 6 kiwifruit, peeled and cut into chunks
  • [q:1/2] galia melon or honeydew melon (approximately 12 oz), peeled, deseeded, and cut into chunks
  • [q:3 1/2] oz caster sugar or superfine sugar
  • 4 sprigs of mint, leaves picked off
Directions
  1. Place all fruit in a freezer bag and freeze until firm. When ready, bring sugar and [q:3 1/2] fluid ounces water to boil in a saucepan. Simmer until sugar has dissolved. Cool until it is just lukewarm. (A quick way to do this is to place the saucepan in a basin of cold water.)
  2. While sugar syrup is cooling, remove fruit from freezer to soften a little. Place fruit in a food processor along with mint leaves and blitz, pouring in sugar syrup slowly. Continue blending until completely cooled. Mixture should have a soft-serve texture, meaning you could serve it straight away. Or, you could give it a few more hours in a freezer-proof tub in the freezer to firm it up before serving.

  • 1 Tbsp shredded or ribbon cut unsweetened coconut
  • [q:3/4] cup coconut yogurt
  • 2 tsp lemon juice
  • 2 to 3 tsp raw honey, plus a drizzle to garnish
  • [q:1/8] tsp pure vanilla extract
  • 1 kiwifruit, peeled and sliced
  • 1 heaping Tbsp gluten-free graham crackers, crushed
  • 1 tsp finely grated lemon zest
Directions
  1. Place coconut in a small saucepan set over medium heat and toast coconut until it begins to brown. Remove from heat and set aside.
  2. Place yogurt in a bowl and mix in lemon juice, honey, and vanilla extract until combined.
  3. Arrange or layer kiwifruit and then crushed graham crackers on top of yogurt mixture. 
  4. Garnish with toasted coconut, lemon zest, and drizzle with a little honey.

  • 1 package (10 oz) frozen unsweetened strawberries
  • 1 tsp almond extract
Directions
  1. In blender, place apple juice, yogurt, and kiwi. Blend until smooth.
  2. Add strawberries and almond extract. Blend again until smooth and thick.
  3. Serve immediately. (Unused portions may be frozen.)
