Food for Life Roasted Veggies & Cranberries in Ezekiel 4:9 Organic Sprouted Flourless Pita Bread

1 cup roasted sweet potatoes, cubed

1 cup roasted Brussels sprouts

4 cups of spinach, sauteed

1⁄2 cup cranberry sauce (homemade or store-bought)

1⁄4 cup toasted walnuts or pecans, chopped

2 Tbsp vegan or regular cream cheese
-
Fresh rosemary or thyme for garnish

Olive oil, salt, and pepper

Preheat oven to 400°F. Toss sweet potatoes and brussels sprouts with olive oil, salt, and pepper. Roast for 20–25 minutes until caramelized.

Sauté spinach in a pan with olive oil and a little salt and pepper until wilted.

Warm pita breads in the oven or toaster. Cut in half to make pockets.

Inside each pita pocket, spread a thin layer of vegan cream cheese.

Add roasted vegetables, spinach, a spoonful of cranberry sauce, and sprinkle with toasted nuts.

Top with fresh rosemary or thyme for a festive touch. Serve warm.
