Frozen Topped Bananas

Ingredients
  • 2 ripe, firm bananas, peeled
  • 1 cup semisweet chocolate chips or dark chocolate, chopped
  • 2 Tbsp vegetable oil
  • [q:3/4] cup combination of chopped nuts, dried fruit, granola, and/ or shredded coconut*
Directions
  1. Line a baking sheet with parchment paper or nonstick foil.
  2. Slice bananas in half widthwise and insert a wooden frozen treat stick lengthwise into each banana half. Place bananas on baking sheet and freeze for 15 minutes.
  3. Melt chocolate with oil in a large bowl by microwaving at 50 percent power for 2 to 3 minutes. Stir occasionally with a spoon, until melted and smooth.
  4. Holding wooden stick, roll each banana half in melted chocolate. Quickly sprinkle desired toppings over.
  5. Freeze bananas until frozen and chocolate sets, 30 to 45 minutes. Serve immediately or freeze up to 1 week in an airtight container.

Ingredients
  • 4 cups rolled oats
  • [q:1/4] cup Kabrita Goat Milk Toddler Formula, unprepared
  • [q:1/4] cup brown sugar
  • [q:1/4] to [q:1/2] tsp salt
  • [q:1/2] cup sunflower seeds
  • [q:1/2] cup pumpkin seeds
  • [q:1/4] cup hemp seeds
  • [q:1/4] cup chia seeds
  • [q:1/2] cup grapeseed oil
  • [q:1/2] cup maple syrup
  • 2 tsp vanilla
  • Optional: Mini chocolate chips
Directions
  1. Preheat oven to 325F
  2. Combine dry ingredients rolled oats, Kabrita Goat Milk Toddler Formula, brown sugar, salt, sunflower seeds, pumpkin seeds, hemp seeds and chia seeds, into a large bowl.
  3. Whisk wet ingredients [q:1/2] cup grapeseed oil, [q:1/2] cup maple syrup and 2 tsp vanilla in a separate bowl.
  4. Combine wet mixture into dry mixture, stirring until evenly mixed.
  5. Pat down evenly onto a baking sheet.
  6. Bake 40 minutes at 325F, rotating the pan halfway through.
  7. Let cool completely then cut into bars and enjoy!

Ingredients
  • [q:1/2] yellow or orange bell pepper, cut into bite-size pieces
  • [q:1/2] tomato, seeded, cut into bite-size pieces
  • [q:1/4] cup radish, chopped
  • [q:1/4] cup red onion, chopped
  • [q:1/2] cup dried fruit (apricots, raisins, dates, figs, or currants), finely chopped
  • 2 Tbsp toasted pine nuts, sesame seeds, or sunflower seeds, or chopped almonds, walnuts, or pecans
  • 3 oz low-fat mozzarella cheese, diced
  • Salt and freshly ground black pepper, to taste
  • 3 cups cooked (and cooled) brown rice, quinoa or wild rice
  • Juice of 1 lime
  • 2 Tbsp extra-virgin olive oil
  • 2 Tbsp fresh chives 
  • 1 Tbsp fresh mint
  • 1 Tbsp fresh cilantro
Directions
  1. In a large bowl, gently mix bell pepper, tomato, radish, onion, dried fruit, nuts (or seeds), and cheese.
  2. Season to taste with salt and pepper.
  3. Fluff the cooled rice or grain with a fork. Season to taste with salt and pepper and add to the vegetable mixture.
  4. In another bowl whisk together the lime juice, oil, and herbs. Drizzle over the salad and mix in lightly.

Ingredients
  • 1 cup pecan halves
  • 1 Tbsp vegetable oil
  • [q:3/4] tsp chili powder
  • [q:1/8] tsp cayenne pepper
  • 1 Tbsp sugar
  • 1 tsp grated orange zest
  • [q:1/4] tsp salt (preferable coarse kosher salt)
  • [q:1/3] cup dried pitted cherries
  • [q:1/3] cup roasted and salted pepitas (pumpkin seeds)
  • [q:1/3] cup dried cranberries
Directions
  1.  Preheat oven to 350°. Place pecans in a bowl.
  2.  Heat oil in a heavy small skillet over medium heat. Add chili powder and cayenne and stir until fragrant, about 15 seconds. Pour over pecans. Mix in sugar, orange zest, and salt.
  3.  Transfer to a baking pan. Roast until nuts are toasted, about 10 minutes. Remove from oven and cool completely.
  4.  In a medium bowl, combine toasted pecans, cherries, pepitas, and cranberries. Mix to combine.

  1. Heat oil in a large pot and pop corn according to package directions.
  2. Place popped corn in a large mixing bowl. Add the snack mixes.
  3. Place the barley malt and maple syrup in a saucepan and bring to a boil.
  4. Reduce the flame to medium-low and simmer, stirring frequently for 5 to 7 minutes.
  5. Pour the hot syrup over the popped corn mixture. Mix thoroughly until all popcorn mixture is completely coated with syrup.
  6. Pour 1 cup cold water into a small bowl. Lightly moisten your hands with the cold water.
  7. Take a handful of the popcorn mixture and form it into a ball while packing firmly with you hands, just like you would if making a snowball.
  8. Repeat the above steps, making sure to moisten your hands before making each ball.
  9. Wrap the balls in wax paper or baking paper, or place in a covered container and freeze until the syrup hardens.

Coleslaw

  • 1 large head of savoy cabbage, sliced thin
  • [q:1/3] cup raisins
  • 1 cup red grapes, halved
  • 5 strawberries, sliced thin
  • 2 red shallots, sliced thin
  • [q:1/4] cup slivered almonds
  • [q:1/2] cup flat-leaf parsley, roughly chopped

Creamy Poppy-Seed Dressing

  • 2 Tbsp mayonnaise
  • 2 tsp gluten-free Dijon mustard
  • 1 Tbsp extra-virgin olive oil
  • 2 Tbsp raw apple cider vinegar
  • 1 tsp honey
  • 1 small clove garlic
  • Freshly ground pepper
  • 1 Tbsp poppy seeds
Directions
  1. Add all coleslaw ingredients to a large bowl. Toss to combine well.
  2. In a small blender, add all dressing ingredients except poppy seeds. Blend until smooth. Stir in poppy seeds and pour the dressing over the salad.
  3. Toss to coat and allow to sit in the fridge, covered, for 1 hour. Or serve right then and there. It’s good either way! Will keep in the fridge for up to 3 days.
