Ingredients
  • 1 package of dry-active yeast ([q:2 1/4] tsp)
  • 1 cup warm water
  • 1 tsp sugar
  • 1 tsp salt
  • 3 Tbsp olive oil (we use 1 Tbsp)
  • 3 to [q:3 1/2] cups bread flour (we use 3 cups so that the dough stays moist.)
Directions

Making the Pizza Dough

  1. Dissolve the yeast in the water and let rest for five minutes. Once the yeast mixture is bubbling, add the salt, sugar, oil and mix together. Gradually add the flour until the dough is pliable and easy to work with. Knead for 5 to 10 minutes. Place the dough ball in a greased container and cover with plastic wrap. Let the dough rise for 1 to 2 hours until double in size and the indent from your finger remains.
  2. Punch down the dough and divide into three balls. Working with one ball at a time, pat into a disc and begin stretching out. If necessary, use a rolling pin to roll the dough into an 8 to 12-inch round pizza crust.

Making a Pizza

  1. Place the crust on a wooden pizza wheel or directly on the baking pan. Cover with pizza sauce, cheese and other toppings. Remember that less is more with pizza toppings for this style of pizza.
  2. Bake the pizza on a pre-heated pizza stone in the BBQ or in the oven at the highest heat.

Directions
  1. Roll out the pizza dough on a lightly-floured surface and cut the dough into pairs of roughly 6?-squares.
  2. Pile your filling into the center of a square.
  3. Wet the edges of the square with water, using your finger or a pastry brush, and place another dough square on top.
  4. Press the edges together, crimping them with a fork to seal the pocket.
  5. Place the pockets on a greased baking sheet and bake them at 400 degrees for 10 to 15 minutes or until the crust is golden.
  6. Remove the pockets from the oven, let them cool for 5 to 10 minutes, and serve them with warmed pizza sauce or another dipping sauce of your choice.

  • 1 whole-grain pita, 7-inch-round, uncut
  • [q:1/2] cup pizza or pasta sauce
  • [q:1/8] cup part-skim mozzarella cheese, grated
  • Assorted veggies, chopped (peppers, onions, mushrooms)
  • 1 tsp extra-virgin olive oil (optional)
Directions
  1. Preheat oven to 350°. Place pita on baking sheet or pizza stone.
  2. Cover pita with sauce and top with cheese.
  3. Sprinkle on as many chopped veggies as you can fit.
  4. Drizzle optional olive oil on top. Bake for 15 minutes or until cheese begins to brown.
