Butternut Squash & Black Bean Fall Wrap on Ezekiel 4:9 Sprouted Whole Grain Tortillas

Ingredients
- 1 Ezekiel 4:9 Sprouted Whole Grain Tortilla
- 1 cup roasted butternut squash cubes
- 1 cup cooked black beans (rinsed and drained)
- 1/2 cup kale
- 1/4 cup diced red onion
- 1/2 avocado, sliced
- Fresh cilantro leaves
- 1-2 tbsp tahini
- 1/4 tsp smoked paprika
- 1 tbsp olive oil
- Salt and pepper to taste
Directions
- Roast the butternut squash. Toss cubes with olive oil, smoked paprika, salt, and pepper. Roast at 400°F for 25-30 minutes until tender and caramelized.
- Sauté the kale, onions, and black beans. In a skillet, sauté the red onion and kale until soft. Season with salt and pepper. Add in black beans and mix until warmed.
- Warm the tortillas, heat them in a pan on low, gently, until soft and pliable.
- Assemble the wraps. On each tortilla, layer roasted butternut squash, black beans, sautéed kale and onions, avocado slices, and fresh cilantro. Roll together, insert a toothpick if needed to keep together. Drizzle with tahini.
