Raspberry Clafoutis

Ingredients
- 1 tsp unsalted butter
- 2 cups raspberries, fresh or frozen
- 3 eggs
- 1 cup whole milk
- 1⁄2 cup small-curd cottage cheese
- 1⁄3 cup sugar
- 1⁄2 cup flour
- 1 tsp vanilla extract
Directions
- Preheat oven to 375°. Grease bottom and sides of a 9 1⁄2-inch round glass baking dish with butter.
- Place raspberries in bottom of greased dish.
- Whisk together eggs, milk, cottage cheese, sugar, flour, and vanilla extract in a bowl.
- Pour egg mixture over raspberries. Bake until puffed and golden, 40 to 45 minutes.
