Ingredients
- 1 cup EDENSOY Vanilla
- 2 Tbsp EDEN Brown Rice Vinegar
- 3 Tbsp EDEN Safflower Oil
- [q:1/3] cup organic maple syrup
- [q:2 1/2] cups organic whole wheat pastry flour
- [q:2 1/2] tsp non-aluminum baking powder
- [q:1/2] tsp EDEN Sea Salt
- 2 cups unsweetened crushed pineapple, in its own juice
- 1 tsp ground cinnamon
- 2 tsp fresh ginger root, finely grated
- or [q:1/4] teaspoon ground ginger
Directions
- Preheat oven to 375°.
- Mix all wet ingredients together.
- Mix dry ingredients together.
- Combine wet and dry ingredients.
- Fold in pineapple and grated ginger.
- Oil muffin tins and fill.
- Bake for 18 to 20 minutes.
