Green Banana Flour Pancakes

Makes approximately 12 pancakes
Ingredients
- 2 c green banana flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1⁄2 tsp salt
- 2 c your favorite non-dairy milk
- 4 eggs, whisked
- 1 tsp vanilla extract
- Oil for cooking pancakes
Directions
- Whisk together green banana flour, baking powder, baking soda, and salt. Whisk in milk, eggs, and vanilla.
- Heat 1 teaspoon oil in a pan over medium heat. Add 1/3 cup of batter to pan to form 1 pancake.
- Cook about 2 minutes, until bubbles appear on surface and underside of pancake is cooked. Flip pancake and cook remaining side for another 2 minutes.
- Repeat steps 2 and 3 until all batter has been used.
- Serve pancakes with maple syrup, honey, yogurt, and/or sliced fruit.
