Courtesy of Eden Foods 35 MINUTES PREP TIME Serves 10 Ingredients: 12 ounces Eden Organic Kamut & Quinoa Twisted Pair 15 ounces Eden Organic Garbanzo Beans, drained 15 ounces Eden Organic Kidney Beans, drained 1 1/2 c celery with leaves, minced 3 medium organic tomatoes, diced 1 c fresh parsley, chopped 24 ounces water-packed artichokes, quartered 1/2 c pitted kalamata olives, sliced in half Dressing 1/2 c Eden Extra-Virgin Olive Oil 1/3 c fresh lemon juice 1/4 c Eden Organic Brown Mustard 1 tsp Eden Sea Salt, or to taste 1/2 tsp freshly ground black pepper 1/3 c fresh basil, chopped Directions: 1. Cook pasta per package directions. Remove from heat, rinse, and drain. Place in bowl with beans, celery, tomatoes, parsley, artichokes, and olives. 2. To prepare dressing, place all ingredients in blender and pulse several seconds. Pour dressing over salad and toss to mix. Serve as is or chill 1 hour before serving.
