South of the Border Salad

This salad isn't for the faint of heart. Make enough for yourself or for a gang of hearty, healthy eaters.

What you need

  • Lettuce, shredded
  • Diced red pepper
  • Chopped carrot
  • Sliced cucumber
  • Minced jalapeno pepper (about a half pepper per person)
  • Black beans
  • Canned or frozen (thawed) corn
  • Green beans, raw, broken into bite-sized pieces
  • Feta cheese
  • Ranch dressing or hot sauce

Directions

  1. Combine all ingredients and enjoy.
