Ingredients
  • 8 carrots, grated
  • [q:1/2] cup fresh basil, coarsely chopped
  • 2 Tbsp raw olive oil
  • [q:1/4] cup dried cranberries
  • [q:1/4] cup almonds, crushed
  • [q:1/2] lemon, juiced
  • [q:1/2] tsp sea salt
Directions
  1. Mix all ingredients in a bowl.
  2. Wait 15 minutes before serving to allow time for the flavor of the cranberries to seep throughout the dish. Serve.
